The one that comes to mind first is Dave Gilmoure-"Time" from dark side of the moon. Really soulful and polished. But I have a lot of favorite pickers that have laid down some really heavy licks. I like almost everything Danny Gatton played. Brent Mason has also done a lot of rides that make my jaw drop. Known by most as a Nashville studio musician, he is really good in any venue.
